Elicit Brewing Co. - Fairfield

LDL Studio’s third collaboration with Elis Restaurant Group brings the Elicit Brewery brand to Fairfield, Connecticut. The 25,700-square-foot transformation turns a vast industrial shell into a vibrant destination brewery featuring a taproom, restaurant, speakeasy, and open-air beer garden. Designed for flexibility, high-volume service, and immersive atmosphere, the space delivers both intimacy and scale. This project builds on the success of previous Elicit locations in Manchester and ongoing work in Danbury and Hampden.

From the start, the design vision centered on a bold architectural move: a central “spine” that organizes and connects the building’s diverse program elements. LDL Studio divided the expansive footprint into smaller, inviting zones using half-height walls and varied-height dividers, creating a guest experience that feels more like a lively pub than an industrial warehouse. Operable overhead doors, sliding partitions, and an under-roof open-air beer garden allow the space to expand easily for weekend brewery crowds and private events. The venue was also designed with operational efficiency in mind, offering dual food and bar ordering counters to optimize guest flow and reduce wait times during peak hours. Visually, the transitional interior style introduces signature brand elements, including a dramatic 14-foot-high copper feature wall, shou Sugi ban wood paneling, and hanging kokedama garden spheres. In the speakeasy lounge, tufted leather seating and vintage graphic murals from local breweries deepen the brand identity and give Fairfield’s Elicit Brewery its own distinct personality within the broader EBC portfolio.
